Description: Provides students with the fundamentals of mathematics as it relates to the food service industry. Special problems of menu pricing, food costs and their percentages, recipe conversions, labor cost and payroll deductions. Calculating annual revenue required for a restaurant to cover all its forecasted cost and converting the required revenue into average check amount.
